Vegetarian dinner because my husband forgot to take the beef out two nights in a row lol
This was supposed to be served with meatballs, oh well.
Tomato sauce, 4 zucchinis, and 2 yellow squash cooked down for 40min with Italian seasoning. Added a little ricotta and then placed in a casserole dish because I wanted melty cheese.
It turned out really good. I’m not a vegetable eater and I had two helpings. The squash will be a way I sneak vegetables into my pasta dishes from here on out.
Very few ingredients went into this which made for a really simple dinner.
I’ve definitely been known to forget to take the meat out of the freezer 😂 still looks great!
