I like mine “saucy”, more wet than some I think. I used 4 egg yolks and 3 eggs (other recipe I read said 2 eggs and 2 yolks), shredded parmesan and pecorino Romano with a few hand fulls of trader Joe’s blended italian cheese.
Cook the bacon, make the egg and cheese mixture, adding cracked pepper, cook the pasta until al dente and you’ve got spaghetti carbonara. I think I used an 18oz spaghetti package. I dont drain my pasta because I like the pasta water with the cheese mixture, so I just scoop out the noodles with a slotted grippy spoon and let whatever water that wants to come with it fall into the bowl. Then fold the noodles,cheese mixture, and bacon together a bunch.
