Small pork tenderloin with gravy, rice, and sweet potatoes.

Roast pork and gravy is one of my love languages. My Great Grandma spoiled me with it my entire life. I didn’t have a roast, but this tenderloin worked well and cooks way faster.

The sweet potatoes were diced, sprinkled with all spice, cloves, nutmeg, and a spoonful of brown sugar and margarine. Baked at 350 (with the tenderloin) and finished at 425F for about 25 minutes. My husband is against the usual butter and brown sugar combo I go.

I’m all about using my castiron for gravy.
