My Christmas gift to my parents this year was Christmas dinner

Beef Wellington
Sousvide & cast iron finished steak
Pork loin
Mashed potatoes
Gravy
Red wine sauce
Asparagus with candied bacon
Sousvide carrots

The sousvide really came in handy because I was able to do everything and sear the steaks last second!

I also Sousvide the carrots 2 days in advance (you can store them for a week) and finished on the stove to reheat. I made the red wine sauce two days I’m advance and stored it in Mason jar that I placed in the Waterbath to reheat

My wellingtons didn’t turn out as good as last year. I made much smaller ones this year because people had different cook temp preferences, but because they were smaller they cooked faster so I couldn’t get the coloring on the puff pastry like I would have preferred.

It’s been a marathon past few days. I forgot to take pictures of the appetizers, but I did cheese fondue bread bowls, sweet meatballs, deviled eggs with candied bacon, and homemade chicken nuggets.

Thank you food community for being as excited about cooking as I am! I feel like you all understand the struggle with not being completely happy with a meal because it wasn’t perfect, but for my first big dinner it turned out pretty good! I just wish those wellingtons would’ve colored better.
