Last weekend, some friends & I wanted a little adventure out of town, so we went…

Last weekend, some friends & I wanted a little adventure out of town, so we went to Knott’s Island! This farm out there had some delicious peaches to pick from the trees. I’m not a big fan of peaches, but thought it might make a yummy salsa and dang was I right!! Made dinner for my fam the other night and topped it on Seasoned Grilled Pork Chops 😋

Ingredients for Peach Salsa:
2-4 Peaches, finely chopped with skin
1 Orange Pepper
1/2 c. Cilantro, finely chopped
1/2 Red Onion, finely chopped
1 Jalapeño
2 tsp. Lime Juice
Dash of salt to taste

Ingredients for Pork Chips:
4 Pork Chips, thick cut
3 Tbsp. Butter, melted
1/2 tsp. Garlic Powder
1/2 tsp. Dried Rosemary
1/2 tsp. Dried Thyme
1/2 tsp. Salt
2 Garlic Cloves, minced
1 tsp. Black Pepper

Directions:
1. Prepare peach salsa by combining ingredients in bowl. Cover and chill for minimum 1 hour.
2. Place pork chops in container & rub salt evenly on both sides.
3. Melt butter, then combine all seasonings in bowl and mix. Rub on both sides of pork chops with marinating brush.
4. Place on grill and cook for about 15 minutes.
5. Top pork chops with homemade peach salsa. I paired with seasoned roasted red potatoes and asparagus. Enjoy!!
