It’s really amazing what some good, simple flavor can do for certain foods, espe…

It’s really amazing what some good, simple flavor can do for certain foods, especially when it comes to tilapia! I just really find so much joy in experimenting in the kitchen trying new recipes and flavors! Tonight’s plate was Spicy Lemon Garlic Baked Tilapia paired with whole wheat orzo & roasted asparagus

Ingredients:
2-4 tilapia filets
1 Tbsp. Lemon Juice
3 Tbsp. Butter, melted
1 tsp. Garlic, minced
1/2 tsp. Red Chili powder (I used Trader Joe’s Chili Lime seasoning)
Salt to taste
1/2 tsp. Black Pepper
1 Lemon, sliced
2 Tbsp. Fresh Parsley, chopped
Parmesan Cheese

Directions:
1. Preheat oven to 350. Prepare the tilapia by washing and patting dry with paper towel. Place on foil lined baking sheet.
2. Melt butter, then add in lemon juice, garlic, red chili powder, salt, and black pepper in a bowl. With marinating brush, evenly spread over filets.
3. Arrange lemon slices around tilapia.
4. Bake for 15-20 minutes. Garnish with fresh parsley & parmesan

For the roasted asparagus, I wanted to have similar flavor as tilapia, so I sprinkled with olive oil & lemon juice. I then added black pepper, kosher salt, and a little bit of minced garlic

For orzo pasta, I wanted a little more flavor, so I added about 1 Tbsp. Pesto (see new brand I found, in stories!!) I just used this as a base layer, about 1/2 cup of cooked orzo
