Chilly days call for a good pot of soup! I am on a soup kick this season, with so many on my list to try. Cauliflower Sausage Kale Soup is so tasty!

Ingredients:
1 Tbsp. Olive Oil
12 oz. Mild Sausage
3 Slices Bacon, chopped
1 Medium Yellow Onion, chopped
2 Cloves Garlic, minced
6 c. Cauliflower Florets or Pearls (1 1/4lb.)
32oz. Chicken Broth
1 c. Cocoanut Milk
4 c. Curly Kale, chopped
Fresh Mushrooms
Kosher Salt & Pepper, to taste

Directions:
1. I prefer to bake my bacon…place on a foil lined baking sheet & cook at 400 until cooked to preference.
2. In a Dutch oven or large pot, add sausage to brown. Remove & place in a bowl.
3. Add olive oil & yellow onion to cook until soft, about 3-4 minutes. Add in garlic for another minute.
4. Add cauliflower & chicken broth. Season to taste with salt & pepper. Simmer uncovered for 15 minutes or until cauliflower is tender.
5. Purée soup until smooth in a blender or with immersion blender. {I did not have a working blender at the time, that’s why I opted to get the cauliflower pearls}
6. Add coconut milk and bring to a simmer. Stir in sausage, bacon, kale, & mushrooms. Continue to simmer until kale is wilted, approximately 5 minutes.
7. Serve with a sprinkle of desired amount of red pepper flakes! Enjoy!!

Keeps for 3-4 days in air tight container, not recommended to freeze.
