Can you believe I had never had Shrimp Ceviche until I was in Cancun last year?!…

Can you believe I had never had Shrimp Ceviche until I was in Cancun last year?!? It’s easily become a favorite, especially in summertime, gotta make up for lost time!!

Ingredients:
1 lb. Med-Large Shrimp (peeled & cooked)
1 Cucumber, peeled & quartered
2 Roma Tomatoes, diced
1 Avocado
1/2 Red Onion, diced
1 Jalapeño, finely chopped
1/4 c. Cilantro, chopped
1/4 c. Lime Juice
Black Pepper, to taste
traderjoes Chili Lime Seasoning, to taste

Directions:
1. Prepare the shrimp, removes tails, and cut into smaller pieces (I did 3rds).
2. In large bowl, combine all other ingredients in order. Lime juice, black pepper, and chili lime seasoning is all to taste as needed.
3. Add shrimp and thoroughly mix together. Enjoy!!
