🚨 10 minute dinner 🚨
I can’t decide if I want to call this “clean out the fridge” pasta or “eat your dang veggies” pasta. Either way, it’s quick and easy. Just boil you some eatbanza (chickpea protein pasta) or other pasta of your choice. While it’s boiling, sauté whatever veggies you have at home in some olive oil. In my fridge/veggie basket I had: half a yellow pepper, asparagus, broccoli, onion, garlic, and cherry tomatoes. Be careful not to overcook…you want a fresh crunch not mush! Drain your pasta and dump in your veggies, a little butter or olive oil, salt, pepper, whatever spices you like (I used onion powder, basil, villagegardenrva chili salt for some kick, and pepper). Mix it all together and adjust the seasonings to your preference. You can even top it with some parmesan if you really want to get wild. Packed with veggies and protein, this meal is perfect when you want a 10 minute meal that isn’t terrible for you. 🍝 🥦 🍅 🧀
