Recipe: (4 servings)
2 cups of rice
2 tbsp of olive oil
2 to 3 cloves of garlic
1 red bell pepper
2 cups of vegetable broth
3 tbsp tomato paste
1 cup of chopped tomatoes
1/2 cup of peas
1 tsp ground paprika
1/2 tsp chili powder
Salt, pepper, parsley
1. First chop the onions, garlic, red bell pepper and carrot into small pieces and saute in oil until the onions are golden brown.
2. Now add the tomato paste and tomatoes.
3. Let it simmer and mix in the rice, peas and vegetable broth.
4. Bring to a boil.
5. When the liquid is absorbed by the rice, season with ground paprika, chili, salt and pepper.
