Eggs Benedict, my old friend.
The first time I had eggs Benedict was on my honeymoon and I have been chasing that flavor ever since. I can’t even count how many times I’ve tried to replicate what I had the first time and I think I finally got it!
4 egg yolks mixed with 1tbsp Meyer lemon juice, whisked until double in size. Placed over a simmering pot keep whisking and add 1 stick of melted butter a little at a time while continously whisking. I placed it on the counter every few seconds to keep it from scrambling. I didn’t use all of the butter. When it got to the consistency I wanted I added some paprika, tarragon, red pepper flakes, coarse salt, and pepper. I stored it in a travel mug to stay hot.
I don’t recommend this after a day of yard work. My arms are tired 😴😴😴
