Baked oatmeal cups are a great way to have quick, filling, and nutritious breakfasts ready to go! To make, preheat oven to 350 and mix these dry ingredients: 3 cups GF rolled oats, 2 big scoops protein powder of choice, 2 tbsp coconut or brown sugar (or other sweetener of choice in an appropriate amount), 1 tsp baking powder, 1 tsp cinnamon, pinch of salt. In a separate bowl, mix these wet ingredients: 2 eggs, 2 mashed bananas, 1 1/2 cups milk of choice, 1/2 cup nut butter, 1 tsp vanilla. Mix all wet and dry ingredients together. Spoon into greased muffin tin (or silicone liners, which I highly recommend). Should fill 12 cups to the brim. Top however you like (blueberries, chocolate chips, etc.) and bake for 40 minutes. I used some enjoylifefoods dark chocolate chips and a sprinkle of flavorgod chocolate donut seasoning (which has 0 calories per serving if you can believe that). To reheat, just pop in the microwave 30-60 seconds.
