Alright summer, I’m ready for ya. Shrimp grill packs for tonight’s dinner! (Minus the grill). Friday nights include a workout and making a healthy dinner whenever possible. It’s a simple tradition that makes me feel great and sets a positive tone for the weekend! Recipe below 👇🏼
1 lb shrimp, peeled
3 small ears corn, chopped into 3rds and boiled for about 10 minutes
1 medium zucchini, chopped into half moons
2 tbsp chopped cilantro
3 cloves minced garlic
2 limes, sliced into wheels
Healthy drizzle of olive oil
Salt, pepper, cayenne pepper, and paprika to taste
Put everything into a bowl and mix well. Distribute evenly into 4 foil packets. Optional: top with a pat of butter before wrapping them up. Bake for about 15 minutes at 400 or until zucchini, garlic, and corn are tender. Open packets and broil until slightly browned and crisped. Enjoy! Can’t wait to make these bad boys on the actual grill with warmer weather!!
