Instant pot Hot and sour vegetable soup with air fryer egg rolls
Such a simple dinner that also uses a lot of pantry staples leftover from sides.
Soup is made from a sauteed onion with mushrooms, garlic, green onions, and carrots added once the onions were almost cooked. Deglaze the pot with stock of your choice. Add chopped cabbage mix and remaining 2 cups of stock (3 total), 2 tbsp rice wine vinegar, and 2 tbsp soy sauce, 2 tsp powdered ginger (my fresh finger grew white mold, sadly), and a heavy hand of red pepper flakes. Pressure for 15 min while you make the egg rolls.
Insides are shrimp, cabbage mix, cilantro, soy sauce, garlic, and red pepper flakes. Assemble and brush with egg wash. Air fry 10ish min until you like the color. I hate crunchy vegetables, so I warmed the shrimp and cabbage mix first.
Tasted the soup and added more ginger and red pepper flakes.
