After a weekend of overindulgence, I always CRAVE foods that are super light and fresh to help me recalibrate my nutrition. Today, I free-styled a big batch of what I’m now calling my “fresh-ta-death shrimp salsa” that is hitting. the. spot. 🎯 To make, chop up and stir together 1 long English cucumber, 2 big juicy tomatoes, 1/4 of a small red onion, cilantro and green onion to taste (I did a LOT of cilantro), and the juice of 1-1/2 limes. Sprinkle shrimp in salt, pepper, garlic powder, and chili lime seasoning and sauté in olive or avocado oil until cooked through. Chop up the shrimp and add it straight to the mix. Top with fresh avocado right before eating and enjoy it with some sietefoods grain free lime tortilla chips. This recipe gave me 4 big portions (one dinner and four lunches this week). I love that this stuff is light enough to be an appetizer and heavy enough to have as a meal. And even better, you can throw it together in about 15 minutes. 🍤 💃🏼
