A SNOW DAY on the first day of spring calls for some spicy chili, fuzzy socks, and reading by your window while the snow quietly falls. This teacher is in her happy place! πΆπ₯βοΈπ Spicy veggie-packed paleo chili recipe:
1 lb ground beef
4 medium carrots, peeled and chopped
1 medium onion, diced
1 large stalk celery, diced
1 large zucchini, chopped
3 cloves chopped garlic
15oz can diced tomatoes
15oz can sugar free tomato sauce
2 tbsp chili powder
1/4 tsp cayenne pepper
1 tbsp dried oregano
Salt and pepper to taste
Brown beef and set aside. Add celery, carrots, and onion to the pot. SautΓ© until tender. Add garlic and all spices until fragrant. Add tomato sauce, diced tomatoes, and zucchini to the pot. Bring to a boil. Lower heat and simmer until zucchini slightly softens. Top with avocado, diced onions, green onions, sliced jalapeΓ±os, or whatever else you like!
