Whole 30 friends, avert your eyes! Everyone else, check out this *almost* fail that turned out to be a pretty yummy breakfast! I tried the infamous 2-ingredient banana and egg “pancakes” recipe. When I tried to make them into an actual pancake, it was a goopy nightmare. Luckily, my unprocessyourfood mini waffle maker saved the day! Blend 4 eggs and 2 bananas in a blender until smooth. Add 1/4 cup birchbenders pancake mix to thicken it a bit (or any paleo flour really). Waffle them, then top with a tiny dab of kerrygoldusa butter, a sprinkle of flavorgod chocolate donut seasoning (which has 0 calories if you can believe that), just a few enjoylifefoods dark chocolate chips, and a drizzle of pure maple syrup. (This recipe will make about 2 more waffles than shown-chalk that up to my initial fail.
