Voila! In 20 minutes flat, I prepped breakfast for today and all of next week! These paleo sausage, egg, and “cheese” cups are made with sausage from a friend’s farm and eggs from a different friend’s coop. How lucky am I to work in the country?! To make, preheat oven to 375. Brown 1 lb of sausage. Whip up 10 eggs, 3 tbsp nutritional yeast (gives it a “cheesy” flavor), ground peppercorn, and fresh or dried chives to taste. Spoon the sausage into an oiled muffin tin. Pour eggs over until each cup is about 3/4 full. Give each cup a gentle stir and pop the tray in the oven for about 12 minutes. That’s it! So easy, so good. To reheat, pop in the microwave for 30 seconds. I’m going to pair two of these each morning with a small greens and fruit smoothie. Try it!
