Tonight’s lazy AF dinner is brought to you by costco and inspired by the time my foster puppy got diarrhea… 🙃
Still with me? You’re my kinda gem. A couple of weeks ago, I made some plain boiled chicken and rice for my little foster pup who had some tummy troubles. A few days after she got adopted, I found myself starving and in a hurry with no food in the house. So what did I do? Dump salsa all over that dog’s cuisine and a GO TO dinner was born.
Now for the Costco upgrade… heat a seedsofchange quinoa and rice packet for 90 seconds, shred some of a $4.99 rotisserie chicken on top, and dump salsa on to your heart’s content. You could add veggies, sour cream, or anything really. (But you could also keep it this simple and it still slaps).
Tonight, after the 2 minutes it took me to prepare this meal, my boyfriend gobbled it up and raved about it. We had a good chuckle over how this quick weeknight meal came to be.
