This type of meal is usually common at least once every 2 weeks for me….throw together a bunch of random items already on hand! Often times, these make some of the best meals!! Tonight’s Plate was Pesto Shrimp with Butternut Squash Spirals

Ingredients:
1 pkg Large Shrimp (frozen)
1 pkg Butternut Squash Spirals (frozen)
1 Red & 1 Yellow Bell Pepper
1/2 White Onion
1 Tbsp Garlic
Pesto & Olive Oil as needed
Feta Cheese

Directions:
1. Thaw shrimp
2. Chop all fresh veggies
3. Cook butternut squash spirals
4. Sauté shrimp in pesto, add in veggies
5. Mix in butternut squash spirals
6. Cook about another 10 minutes
7. Top with feta cheese

I shared this specific recipe I threw together, but you can easily use any noodles or rice on hand, any meat or fish, and any veggies leftover. The creations are endless!
