This big ol’ mess is one of the best breakfasts I’ve ever had: sweet potato, veggie packed paleo chili, runny fried eggs, and guacamole topped with hot sauce and cilantro. It is a delicious mash up of leftovers from the week (chili-stuffed sweet potatoes and homemade guac from taco night). Love using extras from the week after to make a hearty and nutritious breakfast!
