Meet the stupid easy sheet pan meal that gave me dinner and 4 lunches in less th…

Meet the stupid easy sheet pan meal that gave me dinner and 4 lunches in less than 40 minutes (during most of which I went and did something else) all for about $12 from lidlus. Here you see 2 packages of chicken sausages (I did 1 andouille and 1 jalapeño-both of these store brands are whole 30 compliant btw), 1 bag baby potato medley, and 2 bags frozen baby brussel sprouts. Just preheat the oven to 400, line a baking sheet with parchment, roughly chop your sausage and potatoes and place on the pan, then dump your two bags of sprouts on top. Drizzle olive oil on the potatoes and sprouts and season however you like. Using tongs, gently rotate the potatoes and sprouts until well coated. Pop in the oven for 30 minutes, turning everything halfway though. Broil for 2-5 minutes on high at the very end to brown and crisp everything up. Serve topped with sauerkraut and lots of mustard!
