It’s simple to prepare this hummingbird cake with crushed pineapple and ripe bananas. A delectable dessert that is sure to impress is topped with a creamy cream cheese icing! For a special occasion, crush extra nuts and push them into the frosting’s sides.

Additionally, since the flavor of this recipe depends on two fruits, be careful to use the appropriate varieties of each fruit:

Spotty and brown bananas. Your bananas will taste better the uglier they are. Strange, but accurate. Bananas that have already been frozen can also be used. Let the bananas thaw at room temperature. Remove any surplus liquid, mash, and proceed as directed in the recipe that follows.

Crushed and canned pineapple. It is quite acceptable to use fresh pineapple that you crush yourself if you so like!

 

Ingredients

These are the ingredients you need for making Hummingbird Cake:

Cake:

  • Three cups of all-purpose flour
  • Two cups of white sugar
  • One teaspoon of baking soda
  • One teaspoon of salt
  • Three large sized eggs
  • Two cups of bananas, mashed
  • 1 ½ cup of canola oil
  • One cup of black walnuts, chopped
  • One 8-oz can of drained and crushed pineapple

Frosting with cream cheese:

  • One pound of powdered sugar
  • One container (8 ounces) of softened cream cheese
  • Half a pound of softened butter
  • One teaspoon of vanilla extract

 

Directions

  1. Collect all of the items.
  2. Turn the oven on to 175 degrees Celsius (350 degrees Fahrenheit).
  3. Grease two 9-inch cake pans and dust them with flour.
  4. To prepare the cake: In a large bowl, sift together the flour, sugar, baking soda, and salt. In another large basin, mix together the eggs, bananas, oil, pineapple, and walnuts.
  5. Mix the flour and banana mixture until they are well blended. Fill the prepared pans with batter.
  6. Bake for approximately an hour in a preheated oven, or until a toothpick inserted into the center of each pan comes out clean. Place cakes on wire racks to cool.
  7. In the interim, prepare the frosting: In a medium bowl, beat together butter, vanilla, cream cheese, and confectioners’ sugar until creamy.
  8. Cover the top, sides, and center of the cooled cake with an even layer of frosting.
  9. Serve and enjoy!.
