Thai Peanut Chicken Lettuce Wraps

Thai Peanut Lettuce Wraps are a tasty and colorful dish that creatively and healthily blends savory, sweet, and spicy ingredients. Crunchy veggies like bell peppers and carrots are combined with fragrant garlic, ginger, and onions to cook ground chicken. The wraps are presented on crisp, cool lettuce leaves that serve as the ideal container for the tasty filling. Over the top is a rich, somewhat spicy peanut sauce that is creamy and slightly acidic. For added crunch and flavor, garnishes like chopped peanuts, cilantro, and lime wedges are optional. For a light, filling, and adaptable snack or casual lunch, try these wraps.

 

Ingredients

For the Filling:

  • One diced chicken breast
  • One diced zucchini
  • Two tablespoons of garlic
  • One diced yellow squash
  • One sliced red bell pepper
  • A sprinkle of red chili pepper flakes
  • One head of romaine lettuce
  • One tablespoon of olive oil
  • One teaspoon of sesame oil

For the Peanut Sauce:

  • 1/4 cup of creamy peanut butter
  • One tablespoon of rice vinegar
  • One spoonful of maple syrup or honey
  • Two tablespoons of tamari or soy sauce
  • One tablespoon of lime juice
  • One teaspoon of sesame oil
  • If necessary, thicken the sauce with warm water.

For Serving:

  • One head of iceberg lettuce, butter lettuce, or Romaine lettuce (leaves removed)
  • Chopped fresh cilantro, if desired, for garnish

 

Instructions:

  • Mix the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), lime juice, sesame oil in a small bowl.
  • To thin the sauce to the consistency you want, add a tablespoon of warm water at a time. Set aside.
  • Heat the sesame oil in a big skillet over medium-high heat.
  • Add the onion, ginger, and garlic. Sauté until aromatic and softened, for about 2 to 3 minutes.
  • Add the ground chicken to the skillet, breaking it up as it cooks. Cook until browned and well cooked, 5 to 7 minutes.
  • Stir in the fresh vegetables and simmer until they start to soften.
  • Drain any extra liquid.
  • If necessary, adjust the seasoning by tasting it. Take off the stove and put it aside.
  • Spoon a good amount of the filling into the middle of a lettuce leaf.
  • If preferred, top with chopped cilantro and peanuts, drizzle with peanut sauce, and serve with a wedge of lime.
