- Mix the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), lime juice, sesame oil in a small bowl.
- To thin the sauce to the consistency you want, add a tablespoon of warm water at a time. Set aside.
- Heat the sesame oil in a big skillet over medium-high heat.
- Add the onion, ginger, and garlic. Sauté until aromatic and softened, for about 2 to 3 minutes.
- Add the ground chicken to the skillet, breaking it up as it cooks. Cook until browned and well cooked, 5 to 7 minutes.
- Stir in the fresh vegetables and simmer until they start to soften.
- Drain any extra liquid.
- If necessary, adjust the seasoning by tasting it. Take off the stove and put it aside.
- Spoon a good amount of the filling into the middle of a lettuce leaf.
- If preferred, top with chopped cilantro and peanuts, drizzle with peanut sauce, and serve with a wedge of lime.
