RECIPE BELOW I Roasted veggie-quinoa salad. One of my favouriteS. Also gluten-free. I used red quinoa which I like wayy better than the normal kind. More crunchy 😍

Ingredients (2 servings):
1 sweet potato
1/2 green apple
1/2 red onion
1 tbsp olive oil
1/2 tsp cumin
1/4 tsp cinnamon
1/4 tsp curry
1/4 tsp turmeric
1/4 tsp chilli flakes
1/4 tsp pepper
1/4 tsp Salt
1 1/2 cups quinoa
3 large handfuls spinach
2 tbsp tahini
3 tbsp water
1/2 tbsp soy sauce
1/2 tbsp lemon juice
Method:
1. Cut apple, onion and sweet potato.
2. Mix olive oil and spices and spread on veggies.
3. Roast in oven for about 20 minutes at 180c/350f
4. Cook the combos in 4 cups of water (until the water is completely absorbed)
5. Mix tahini, water, soy sauce and lemon juice and add to vegetables, quinoa and spinach
6. Enjoy ✨🌻
