Paleo-ish pizza potato skins. Because This version packs much of the flavor with little of the crap! Hollowed-out baked potato with sugar-free pizza sauce, oregano, sautéed mushrooms, a leetle spreenkle of parm, and uncured pepperoni. I baked the potatoes during my Sunday meal prep sesh. All I had to do tonight was hollow ‘em out, stuff ‘em with toppings, and pop ‘em back in the oven for 20 minutes. I’m all about the stuffed potatoes lately! 🥔
