Instant pot/air fryer pork adobo meat pies

I was trying to make empanadas, but I failed at the folding and decided to make them into meat pies instead 😅

Filling: Cubed pork with sweet soy, oyster sauce, 1/2 cup water, 1/2 cup white vinegar, bay leaves, peppercorn, red pepper flakes, garlic cloves, and little onions pressure cooked for 1 hour and allowed to natural release, then quick saute function and addition of cornstarch slurry and brown sugar.

Dough: 2.25 cups flour, 1 stick of butter (cubed)- pulsed until combined, 1 tbsp white vinegar, 1/3 cup water, and 1 egg added. Once combined, refrigerate 1 hour. Rolled into balls and refrigerated for another half hour. I only took out a little dough at a time and am keeping the rest for tomorrow.

Once assembled I brushed with egg wash. I cooked the first batch too high and had to cover them with foil to finish cooking. Second batch I cooked at low 300s and that worked out much better. Really delicious.
