I’m baaaack, and I’ve got a yummy freestyle dish for ya’ll. Pesto-stuffed, bacon-wrapped chicken was the 💣. And it’s super easy too! Bake 4 slices of bacon for about 10 minutes at 375 to get the crispness going. Meanwhile, butterfly two chicken breasts and cut in half, put a spoonful of pesto, a roma tomato slice, and a fresh basil leaf inside. (I used Trader Joe’s vegan kale pesto with some lemon juice, garlic powder, and nutritional yeast mixed in). Close, wrap in a bacon slice, and secure with a toothpick. Return to the oven and bake for about 15-20 minutes or until the chicken is cooked through. Take out the toothpick and savor!
