Ingredients:
1 lb. Chicken Breast, cut in cubes
2 Red Pepper
1 Yellow Pepper
1/2 Red Onion
1 pint Cherry Tomatoes
1 Zucchini
1 Squash
1/4 C. Balsamic Vinegar
1/4 C. Olive Oil
1 Tbsp. Dijon Mustard
1 Tbsp. Honey
1 tsp. Dried Basil
Salt & Pepper to taste

Directions:
1. In small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, dried basil, and salt & pepper.
2. Prepare chicken, cut into cubes, then pour balsamic mixture over to marinate. Place in fridge for 30 minutes.
3. Meanwhile, cut all veggies into cubes.
4. Assemble the skewers by alternating veggie varieties & chicken. Brush remaining marinade over the skewers before placing on grill.
5. Grill for about 8-12 minutes.
6. Serve immediately! I paired mine with an easy Caesar salad!
