Easy Frog Eye Salad Recipe

Acini di pepe (or couscous) pasta, coconut, pineapple, mandarin oranges, and marshmallows combine to make this frog eye salad, a delightful, refreshing holiday treat. The term Frog Eye Salad comes from the acini de pepe pasta, which in this salad resembles tiny frog eyes.

A creamy custard, mixed fruits like pineapple and oranges, and tiny pasta called acini di pepe are the ingredients of the Frog Eyed Salad, a sweet dessert salad. It frequently has marshmallows, whipped cream, and occasionally coconut on top. This is a popular meal at potlucks and get-togethers.

 

Ingredients:

Here is the list of items you need for making Frog Eye Salad:

  • 1 ¾ cups unsweetened pineapple juice
  • One cup of white sugar.
  • Two big eggs, whisked.
  • Two tablespoons of flour for all purposes.
  • One tablespoon of lemon juice.
  • One tablespoon of vegetable oil.
  • 2 ½ tablespoons of salt.
  • One package (16 ounces) of pasta acini di pepe.
  • Three 11-ounce cans of drained mandarin oranges.
  • One 20-oz can of drained and crushed pineapple.
  • One 8-oz jar of thawed frozen whipped topping.
  • Two 20-oz cans of drained pineapple tidbits.
  • One cup of tiny marshmallows.
  • One cup of coconut shreds.

 

Directions:

  1. Assemble all the ingredients.
  2. Put the sugar, eggs, flour, pineapple juice, and half a teaspoon of salt in a pot. Cook over medium heat until thickened, stirring.
  3. Take off the heat and mix in the lemon juice. Give it an hour or so to cool to room temperature.
  4. Add the remaining 2 tablespoons of salt and oil to a large saucepan of boiling water. Add pasta and cook for 5 to 7 minutes, or until al dente. Rinse with cold water after draining.
  5. In a large bowl, mix together the cooked pasta, cooled egg mixture, crushed pineapple, pineapple tidbits, mandarin oranges, and whipped topping. Chill in the refrigerator for 8 hours or overnight.
  6. Toss in the coconut and marshmallows before serving.

 

Include a Little Variability:

  • Each time you prepare it, you can add shredded coconut, fruit cocktail, roasted pecans, or walnuts to create a fresh recipe!
  • Sliced bananas, pears, apples, or halved red or green grapes can be used to add more fresh fruit.
