Crock Pot Shredded BBQ Chicken Tacos

Easy, tasty, and hands-off, Crock Pot BBQ Chicken Tacos are ideal for hectic weeknights or parties. Using taco seasoning, BBQ sauce, and a small amount of chicken stock, the chicken is slow-cooked in a Crock Pot until it is soft and shreds easily. Ingredients

Here is what you need to make Crock Pot Shredded BBQ Chicken Tacos:

  • 2 lbs boneless, skinless chicken breasts or thighs

BBQ Sauce

  • 1 cup of barbecue sauce
  • 1 packet of taco seasoning (or homemade seasoning).
  • 1/2 cup chicken broth or water
  • One tablespoon olive oil (optional)
  • To taste, add salt and pepper
  • Tortillas (made with corn or flour, whichever you like)
  • Topping options include diced onions, jalapeños, avocado, shredded cheese, sour cream, shredded lettuce, cilantro, and more.

Instructions:

  1. Put the chicken thighs or breasts in the bottom of your slow cooker. For more moisture, you can add a tablespoon of olive oil.
  2. Add the chicken broth (or water), taco seasoning, and BBQ sauce. Make sure the seasoning and sauce are evenly distributed over the chicken by stirring it.
  3. Put the lid on the Crock Pot and cook it on low for 6–7 hours or on high for 3–4 hours, or until the chicken is cooked through and can be easily torn apart with a fork.
  4. After cooking, take the chicken out of the Crock Pot and shred it with two forks. For added flavor, you can add the shredded chicken back to the Crock Pot and toss it into the sauce.
  5. Toss together the tacos by reheating your tortillas. After spooning the shredded BBQ chicken onto each tortilla, garnish with your preferred taco ingredients, such as cilantro, sour cream, and shredded cheese.
