Creamy pasta with Primavera veggies and California blackened chicken
One of my sisters came to visit so I tried to make a meal that could be prepped earlier!
I made the salad in a bag. I had air fried some beets earlier in the day and cooled them before adding them to the spinach arugula mixture with Honey, lemon, mixed nuts, and goat cheese.

Sauteed shallot and garlic, make a rue, add seasoning, slowly add chicken stock until a thick gravy, slowly whisk in cream and parmesan. Gently whisk while simmering. It can be stored for up to a week.
