Chicken kofta meatballs from the skinnytaste meal prep cookbook! Yummy, light, and made enough for 2 dinners (me and the hungry hungry BF) and 1 lunch for me on Monday. I subbed out quinoa for the couscous to keep it gluten free. Sub out cauliflower rice for whole 30, paleo, or low carb. Highly recommend with a little tzatziki!
