Mixed greens, plantains, coconut cauliflower rice, juicy ripe pineapple, and a yummy avocado crema. So many delicious flavors and complimenting textures. I prepped the pork this morning. It simmered in the crockpot while I was at work, then all I had to do was prep the plantains, “rice,” and crema. *chef’s kiss*

Can’t wait to crisp up some carnitas to go over eggs with salsa and avocado for weekend brunch.

And they say whole30 days 10 and 11 are the hardest days. Hardest day, schmardest day. Delicious meals like this keep me going!
