Ingredients

  • One loaf of baguette or French bread, cut in half lengthwise
  • Two cooked and shredded chicken breasts or roughly two cups of prepared rotisserie chicken
  • Half a cup of barbecue sauce (to taste)
  • One cup of mozzarella cheese, shredded
  • Half a cup of cheddar cheese, shredded
  • One little red onion, cut thinly
  • Half a cup of optional corn kernels
  • Fresh cilantro (for garnish, if desired)

 

Instructions

  • Preheat the oven: Line a baking sheet with foil or parchment paper and preheat the oven to 375°F (190°C).
  • Get the bread ready: Slice the French bread lengthwise in half. Lay the halves cut-side up on the baking sheet.
  • Cook the chicken: Season the raw chicken breasts with salt, pepper, and a small amount of olive oil. Cook them in a pan over medium heat for 7 to 8 minutes on each side, or until cooked through. When the chicken is cooked, shred it. Just shred the rotisserie chicken if using it.
  • Combine the chicken and BBQ sauce: Combine the shredded chicken and BBQ sauce in a bowl. Ensure that the chicken has a good coating.
  • Put the pizzas together: For added taste, brush the cut sides of the French bread with a little BBQ sauce. Next, cover the bread with a uniform layer of the BBQ chicken mixture. Add slices of red onion on top, then mozzarella and cheddar cheese. If you prefer a sweet crunch, add the corn!
