For the potatoes, boil for 15-20 minutes or until mostly tender. Between parchment, smash the potatoes using a glass. Drizzle in plenty of olive oil and generous seasonings of choice, then pop in the oven at 475 for about 15-20 more minutes or until crispy, flipping halfway through.
