Apricot Shrimp Kabobs Recipe

Apricot Shrimp Kabobs are a tasty and colorful dish that perfectly balances the salty flavor of shrimp and the sweetness of apricots, making them ideal for a summer grill or a party. Ingredients:

  • One pound of big, peeled and deveined shrimp
  • Half a cup of apricot jam or preserves
  • Two teaspoons of olive oil
  • Two tablespoons of soy sauce
  • One tablespoon of freshly squeezed lime juice
  • One teaspoon of optionally grated ginger
  • One or two minced garlic cloves
  • For more depth, you can add half a teaspoon of smoky paprika.
  • To taste, add salt and pepper.
  • Metal or wooden skewers (to avoid burning, immerse wooden skewers in water for at least half an hour).

Extra Garnishes:

  • Fresh parsley or cilantro, lime wedges, chopped
  • Bell peppers or red onions cut into slices for skewering

 

Instructions:

  • Combine the apricot preserves, olive oil, soy sauce, lime juice, garlic, smoked paprika, grated ginger (if using), and a dash of salt and pepper in a bowl.
  • Mix the apricot preserves thoroughly with the remaining ingredients.
  • Add the shrimp to the marinade-filled bowl, ensuring that they are equally coated. Cover the bowl and chill for 20-30 minutes to let the flavors mingle.
  • Now, preheat the grill or grill pan to medium-high.
  • If you’re adding veggies like red onion, bell peppers, or zucchini to the kabobs, thread them on the skewers alternately with the shrimp.
  • Grill the shrimp skewers for about 2-3 minutes per side, or until they are pink and opaque. Be careful not to overcook the shrimp.
  • Take the kabobs from the grill and serve them immediately. For added taste, garnish with fresh cilantro or parsley and lime wedges.

  • To enhance flavor and color, add veggies such as bell peppers, onions, or zucchini to the skewers.
