A few humbling (and kinda weird) lessons learned from making these air-fried sal…

A few humbling (and kinda weird) lessons learned from making these air-fried salmon cakes for dinner:

1. Canned salmon comes with the bones…and you can just EAT THEM?! Seriously. The canning process lets you just fork smash the bones right in and you don’t even know they’re in there.

2. You can use crushed pork rinds instead of breadcrumbs. Adds protein, subtracts carbs. Kinda like the bones…just do it and try not to think about how weird it is!

3. A replacement plunger for a vitamix costs $13. I’m too ashamed to share how I made that discovery.

Anyway, 2021 came in like a wrecking ball in my kitchen. The cakes were pretty tasty though 🤷🏼‍♀️
