Rack of lamb, cauliflower “macaroni” and cheese, potatoes, beet salad.
I’m not a huge fan of lamb, but my husband is. It was cooked in the cast iron to 125 at the outer parts and 115 in the center for a rare-med rare temp (probably why I’m not a fan). First seared, brushed with mustard, coated with a mixture of herbs, garlic, and bread crumbs that I combined in the food processor. Baked for 12 min at about 375.
The real hero for me was the cauliflower. Seriously my new favorite way to eat cauliflower. Heavy cream combined with mustard, garlic, cream cheese, gruyere, swiss, and parmesan poured over cauliflower that had been boiled for 5 min. Baked until bubbly throughout.
