Ya’ll. I didn’t think I could top my last two grill recipes, yet here we are. 🍤 🥗 🌽 💃🏼 My shrimp and grilled corn salsa salad just tastes like summer! It is savory, spicy, sweet, crisp, and delicious. You can’t not love it! Recipe below 👇🏼

All the magic starts with a trip to the grill! I grilled 2 ears of sweet corn, lightly coated with olive oil and a sprinkle of chili lime seasoning, 3 jalapeños, and some chicken for my rest of the week meal prep. (You could also grill the shrimp for the salad using a grill basket, grill mat, skewer, or foil pack if you wanted to! I didn’t because I was eating the shrimp later.) Grill the corn until it is partially cooked and you see some good grill marks on it. Grill the jalapeños until partially softened with grill marks. Do not cook them all the way so you still get a good crunch in your salsa. Swipe to see what they should look like coming off of the grill 👉🏼

When you’re ready to make the meal, preheat the oven to 400. Toss shrimp in a bowl with olive oil, garlic powder, salt, and a seasoning of your choice. I used some leftover homemade cajun blend, but chili lime and/or cayenne would also be awesome. Spread shrimp out on a sheet pan and roast for 10-12 minutes or until cooked through. While the shrimp cooks, make your grilled corn salsa. Cut the corn off of the cob and put it into a resealable bowl. Rib, seed, and chop the jalapeños. (I left a few seeds because I like the heat!) Stir in the juice of 1 lime, a drizzle of olive or avocado oil, tomatoes (I did 5 campari), about 1/4 small red onion, salt, and pepper. This would be perfect with cilantro but I am fresh out! Because I made this as a meal prep batch, I did not include avocado in the salsa, but added it to my plate to keep the whole bowl from getting funky. Adjust the proportions of each ingredient to get the right flavor for you.

Next, throw it all together! Put down a bed of spinach, top with your grilled corn salsa and some shrimp. Give it a squeeze of fresh lime (and maybe fresh cilantro) and devour!
