Uhmmmm. Did y’all know you can make pizza crust out of 3 plantains and 1/4 cup melted coconut oil?! Because you can and you SHOULD. Thank you fedandfit for this oh-so-amazing recipe for paleo BBQ carnitas pizza on plantain crust.

I made the carnitas yesterday in the crockpot while I did my other meal prep and Sunday fun-day things. (I used 40aprons’ slow cooker carnitas recipe with just pork loin, citrus and spices, and a diced onion and jalapeño)

Today, I just had to throw it all together which was easy as “pie” (get it?) For the crust, ya just pop the plantains, oil and salt in a food processor, spread thin and bake. Top your crust with sugar free/paleo BBQ sauce (I used thenewprimal because it’s whole30 compliant), crisped carnitas, red onion, and jalapeño slices. Bake some more. Throw fresh cilantro on like confetti. Drizzle with a little quick homemade ranch, and savor the delicious flavor.
