This wondrous sight is my Sunday meal prep for the busy week ahead. Now that I’m back in grad school while also teaching full time, I have very little time during the week. On Mondays, I’m up and at ‘em from 5:30am to 10:00pm, so a little prep goes a looooong way with eating well for the week. Here you see pulled rotisserie chicken, hard boiled eggs, whole30/paleo broccoli leek soup, baggies of fruit and veggies to grab and go, and smoothie blender bombs. For the smoothie bags, I put dark leafies like spinach or kale, 1/2 banana, 1/4 avocado, riced cauliflower, chia seeds, and fruit, then keep them in the freezer. This time I even put some leftover raw zucchini in there. When it’s time to make it, I just drop one in my Nutribullet with a scoop of julianbakery plain eggwhite protein and coconut water and blend. I also reuse the baggies a few weeks in a row until they are worn out. Quick protein and veggie options are a MUST for me, as I eat most of my meals while multitasking. Not ideal, but it’s how I’m getting it done ya’ll.
