This upcoming week is absolutely bananas between my professional and personal life. I wanted a no-frills meal prep to keep me on track despite a crazy schedule, and man does this set up deliver. The first picture is just 4 small potatoes, green beans, and two large chicken breasts sliced in half. I topped the chicken and green beans with olive oil, put small pats of kerrygoldusa grass-fed butter on the potatoes, and sprinkled it all with salt, pepper, and a yummy local herb blend. For the egg cups, I put sautéed baby power greens with garlic and onion, sliced tomatoes and a peteandgerrys egg in a silicone cupcake liner. Topped it with salt, pepper, and crumbled bacon. Put everything in a 350 degree oven. Bake the egg cups for about 30 minutes or until cooked through. Cover the chicken and bake for about an hour.
