This breakfast of champions is one of the best Thanksgiving leftover remixes I’ve ever made. I sautéd leftover veggie medley with some onions, threw the hot veggies over a bed of spinach to give it the perfect wilt, and topped it with tomatoes, quick guac, green onion, and two runny eggs. The veggie medley originally had a variety of baby potatoes, sweet potatoes, red onion, peppers, parsnips, and butternut squash. A little hot sauce on top, and you have a nutritious, delicious, and filling that is to boot!
