Thank you Melissa_hartwig for spreading the good news about collard green wraps. What a delicious way to get your dark leafy greens in! Plus, they are much sturdier than lettuce wraps. All you have to do is blanch each collard leaf for 20 seconds in boiling water, then 10 seconds in ice water. That’s it. I used plainvillepoultry turkey (containing only organic turkey breast and sea salt), sugar free bacon, avocado, and tomato. To round out the meal, I piled my plate high with sliced veggies and a handful of jacksonshonest chips (containing only potatoes, coconut oil, and sea salt). I prepped a whole bunch of collard leaves for rolling up sammies all week and sliced up a ton of veggies in lieu of a fancy pants These wraps are a MUST for those sandwich lovers out there who want to put a more nutritional spin on your lunch.
