Stuffed peppers are kind of my new thing. They make a delicious, balanced meal that is both filling and nutritious. And pretty easy to throw together. Since I love all things Greek, we put a Mediterranean spin on these. Stuffed with ground lamb, quinoa, onion, garlic, tomatoes, kalamata olives, green chiles for a kick, lots of herbs and spices, and tomato basil feta. And a dry red, of course. 🌶 🍷
