Strawberry Pecan Spinach Salad With Balsamic Vinaigrette

Ingredients for Strawberry Spinach Salad:

  • For the strawberry salad:
    • Feta
    • Red onion
    • Spinach, and

    • Combine butter, brown sugar, and pecans.
  • For the homemade balsamic vinaigrette:
    • Dijon mustard,
    • Olive oil,
    • Honey, and
    • Balsamic vinegar.

 

How to Make Strawberry Spinach Salad:

  1. To make the balsamic dressing, first put the vinegar in a small saucepan, bring it to a boil over medium heat, and then let it boil for about three minutes, or until it has reduced by half.
  2. Next, add honey, dijon mustard, olive oil, and salt & pepper to taste. Pour into a bowl or jar and stir to combine. If desired, thin with a small amount of water.
  3. To make the candied pecans, put the pecans, butter, and brown sugar in a small non-stick skillet over medium heat. Stir continually for two to three minutes, or until the sugar begins to melt and caramelize.
  4. Toss the salad. Combine spinach, pecans, red onion, strawberries, and half of the feta.
  5. Drizzle about one-third of the dressing over the salad, then spread the remaining dressing over each part on the plate and sprinkle the remaining half of the feta on top.
