Souvlaki salads for dinner tonight and my meal prep for the week! So simple and delicious. Just cube chicken breasts, marinate them in olive oil, lemon juice, lemon zest, white wine vinegar, crushed garlic, salt, pepper, oregano, parsley, and dill, then skewer them and fire up the grill! 🔥 I’m putting one skewer one top of a big mixed green salad and just a tiny bit of jasmine rice. Top with a drizzle of lemon juice and olive oil and devour. I know it ain’t the prettiest, but dang is it TASTY and super simple to prep. (Leave out the rice for paleo + whole30).
