Smoked meat for the rest of the week tonight. Everything was at 225F I put the turkey in first and everything was done in 3 hours
Salmon with lemon, garlic, tarragon, and thyme
Turkey breast for lunch meat
Chicken satay with the most amazing peanut dipping sauce
And italian dressing marinated chicken thighs
The chicken satay is a project I have been working on since I first had it in a restaurant two years ago and I finally got the sauce down! Wish I would’ve measured as I went though so I’m guestimating:
Simmer:
1 can coconut milk
3 dollops of smooth peanut butter
1/4 cup brown sugar (maybe less, idk)
Half a can of curry paste (yellow was all I had)
1 tbsp red curry paste
2 tsp curry powder
I actually marinated the chicken in pretty much the same thing but added red peppers, dark soy, and fish sauce
