Smashed potatoes! My favorite new way of consuming potatoes. I used one bag of Steamables baby red potatoes steamed in the microwave for 7 1/2 minutes. Next, I lined a sheet pan with parchment and smashed each potato with a masher. I topped each potato with a generous drizzle of olive oil, coarse pink Himalayan sea salt, and a dried herb blend from my local farmer’s market containing basil, thyme, rosemary, sage, oregano, lemongrass, dill, and lavender flower. Popped it in the oven at 425 for 25 minutes. They were soft and juicy in the middle with just the right amount of crispiness on the outside!
